Layered Sponge Cakes
They are a naked layer cake, where all the layers are on show and not hidden by any buttercreams of fondants.
The cake toppers are generally a deconstructed ‘garden’, that is all the ingredients within the cake are used to decorate the top with. Keeping the theme of the cake about to be eaten.
Flowers as well as sugar flowers can also be used for decoration, but I prefer only to use flowers from my own provider as she is also a chef and can supply me with food grade flowers but I can work with your florist too. As for the sugar flowers I only use Tia from Sugar Florist, her work is made to order, handmade sugar flowers, and we work closely to match the colours of the cake to the flowers.

Mousse Layered Cakes
These cakes are shorter and comprise of a baked base, layered creams, curds and/or jellies set into a mousse.

These cakes are decorated with a chocolate glaze or chocolate spray and then garnished simply.
